Spring Glow Salad Bowl

A bright, bitter, liver-loving bowl for a radiant body and joyful mind.

The trend has been "Hot Girl Summer" for a while.
I love that for the girlies, but Hot Girl Summer actually starts in Spring. And that "hotness" starts in your kitchen.
Spring isn't about eating less to get "summer ready" (which is a wild concept in the first place).
Health and beauty are about shifting and eating with the season, which will naturally set you up to look & feel good for the next one.
Right now, your body is craving foods that are bitter, bright, and alive!
Your lymph needs movement.
Your body needs freshness.
Your liver is clearing winter heaviness.
This bowl is your answer.
The Spring Glow Salad Bowl
Ingredients (serves 2)
3 cups mixed bitter greens (arugula, dandelion, &/or radicchio)
4 radishes, thinly sliced
½ cucumber, halved and sliced
1 ripe avocado, sliced
½ cup fresh blueberries
2 tbsp pumpkin seeds
1 tbsp hemp seeds
1 cup micro-greens or sprouts (optional but make it pretty and fairy-like)
Turmeric-Lemon Tahini Dressing (makes enough for the bowls + extra to store)
Ingredients:
¼ cup tahini
3 tbsp fresh lemon juice
1½ tbsp extra virgin olive oil
1 tsp raw honey or maple syrup (optional — I tend to leave it out, I love the bitter!)
¾ tsp turmeric powder
¾ tsp fresh ginger, peeled & finely grated
1/4 tsp sea salt
Pinch of black pepper
3–4 tbsp water to thin
Instructions:
Add tahini, lemon juice, olive oil, turmeric, ginger, salt, and pepper to a small bowl.
Whisk together until smooth and combined — it will seize up at first, that's normal, just keep whisking.
Add water one tablespoon at a time, whisking after each addition, until the dressing is pourable but still creamy and coats the back of a spoon.
Taste and adjust — more lemon for brightness, more salt to round it out, more water if you want it thinner.
Use a spatula to scrape every last drop into a wide-mouth jar.
Store in the fridge for up to 5 days. It will thicken as it sits — just add a splash of water and stir before using.
Building the Bowl:
Lay your bitter greens in a wide bowl. This is your salad base!
Arrange radishes, cucumber, avocado, and blueberries over the greens.
Scatter pumpkin seeds and hemp seeds on top.
Finish with microgreens if using.
Drizzle the dressing generously. Eat immediately — ideally outside in the sun if you can manage it.
Optional Add-Ins
If you want more protein (I recommend it) add soft boiled eggs, grilled salmon, grilled chicken, or chickpeas!
Chili flakes for heat if your digestion runs cold (Vata)
A squeeze of extra lemon right before eating for added brightness
